My food life would be so boring if I had never discovered Hungry Girl. Lisa Lillien is the founder of Hungry-girl.com,best selling author of several cookbooks, and now has a television show on the Cooking Channel. In her words she is "not a nutritionist. She's just hungry."
Lisa has created recipes for the person on a diet who wants to eat more than baked chicken and carrots. She has taken thousands of recipes, ranging from appetizers to all out 'fancy' dinners. She has taken some of the most fattening restaurant foods and transferred them into just as tasty - but sooooo less fattening make at home recipes. (Can you say Starbucks Mochachinos?) Her recipes and tips are simple and fun and makes you think "why didn't I think of that?"
I could sing her praises until the cows came home, but instead I will share with you one of my families favorite recipes from the Hungry Girl 1-2-3 cookbook and let you judge for yourself.

Marinate: 15 minutes

Ingredients:
1/2 cup fat-free beef broth
1/2 tbsp. cornstarch
1/2 tbsp. reduced-sodium/lite soy sauce
1/2 tbsp. chopped garlic
1/4 tsp. crushed red pepper
4 oz. raw lean beefsteak filet
Dash salt, or more for optional seasoning
2 cups broccoli florets
1 cup sliced mushrooms
1 cup sugar snap peas
2 tbsp. chopped scallions
Optional garnish: thinly sliced scallions
Directions:
In a bowl, combine beef broth, cornstarch, soy sauce, garlic, and red pepper. Whisk untilcornstarch dissolves. Set aside.
Season beef with salt and thinly slice. Add to the bowl and toss to coat. Cover and let marinate
in the fridge for 10 - 15 minutes.
Bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add broccoli,
mushrooms, sugar snap peas, scallions, and 1/4 cup of the marinade from the beef. Stirring
occasionally, cook until broccoli softens, about 3 minutes. Add beef and remaining marinade.
Stirring occasionally, cook until beef is cooked through, 2 - 3 minutes.
Serve it up and, if you like, season to taste with additional salt and garnish with sliced scallions.
